2021 Traditional Method Sparkling HUGO

11.0% ABV

Grapes/Blend: Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris, in that order of magnitude in the blend.

The wine is a field blend which has been co-fermented. There is no added sulphur, yeast, fining agent or dosage for the primary ferment. However, for the secondary ferment we add a biodynamic yeast from Champagne Fleury, but nothing else.

We use a traditional Coquard basket press.

No pumps are used for the wine, all movements are done by gravity. Ferment takes place in 5 or 6 fill Burgundy barrels and some amphora. A small proportion of reserve wine is added to the vintage.

Sheep graze the vineyard in the winter to keep the grass down and add fertility. The vineyard is on south facing chalk downland at an altitude of 90 meters.

The wine is certified Organic and Biodynamic.

Winemaking: This is made from the last pressings, the Taille.  Fermation in tank, no added yeast or sulphur. After a year the fermenting juice from the next vintage is added to the wine to create the secondary ferment, just before bottling by gravity.

No filtration, no disgorgement.
